SAIT Culinary Campus Display Showpiece

The SAIT Culinary Campus, downtown Calgary Alberta, is an amazing new place, focused  on education & entertainment through cooking and baking.

The campus is open to the public.

You can purchase lunch meals and delicious pastries here, participate in group and team building events, or take educational cooking classes and baking classes.

I had the amazing opportunity to create the showpiece in celebration of the opening of the campus:

The Culinary Campus is located on the 2nd floor of the Scotia Centre (226, 230 – 8th Ave SW, Calgary AB).

Recently I had the second delight of teaching a wonderful class of students how to make a hamburger cake at SAIT Polytechnic as part of their Continuing Education classes

Here are some upcoming cake events I wanted to share – cake contests, competitions, classes, and demos going on!

Threadcakes 2011 now open for entries!

Threadcakes is a fun cake decorating contest that anyone can enter. Entries end on August 15th, 2011. It is a web-based contest, where you take photos and or/videos of the making of the cake to submit. (This was my entry from last year!) The goal of this contest is to design and create a cake based on the many amazing Threadless T-Shirt Designs.

I love these contests as it’s a really great way to practice skills! I also love browsing the entries as many of the entries explain: 1. How much time it took to decorate the cake and, 2. The process showing how they made the cake, along with tons of photographs

Cake Competition at the Calgary Stampede

For those located in Calgary, AB, I highly suggest to check out the cake entries at the annual Calgary Stampede, Western Lifestyles Creative Arts & Crafts Competition. I love this competition event because the art and crafts that you will see here are contributed by local Calgarians and Albertans, really making them part of the Stampede.

The intricate cakes will be on display in the BMO Center in the arts & crafts area. Entries are now closed, but if you are interested, plan for next year – the contest is open to anyone! At no extra cost, you can also see live cake decorating demonstrations  from the Calgary Sugarcraft Guild on Saturday July 9th from 11:00 am to 8:00 pm in the same area as well.

Cake Love 2011 – Cake Conference

Cake Love 2011 is a huge cake class and teaching event to be held on September 23rd to 25th in Vancouver, Canada. And they now have the prices and schedule posted online!

Famous professional cake decorators from all over the world, some that you may have even seen on TV, such as Colette Peters, Anne Heap, Norman Davis, Laura Kitchens and Toba Garett will be at Cake Love 2011. Registration is $85 for those staying at the host hotel (the Delta Vancouver Airport), or $185 that want to stay elsewhere. Plus the additional cost for each class you want to sign up for – classes and demos range anywhere from $20 and up, with most classes under $100.

I would describe her photography style as modern, with a very soft feel.  I feel she’s especially great at capturing/noticing the fine details – the special details that make a wedding so unique and individual.

He loves the Calgary Flames, so it was a great idea to dress him in a Flames jersey 😉 .

The cake topper were made of Super Sculpey Polymer Clay. It was sculpted in a neutral colour, then painted afterwards. I might try mixing clay colours next time instead of painting, as some of the crevices were hard to get to. I worked on the project over the course of a week, but all together I estimate that it took about 15-20 hours to do from start to finish.

I was inspired by Smellybugs Maquette Tutorial – a professional sculptor who was kind enough to post the steps of the making of an amazing fantasy creature out of Sculpey/polymer clay. If you are seriously into sculpting, you have the check it out his tutorial!

I’ve been fortunate to have the opportunity to instruct a number of courses. It’s enlightening to see students find that moment of happiness… That epiphany moment when it all comes together.

The Market Place at SAIT, Main Campus

The Market Place at SAIT carries Satin Ice fondant (20lb pails for the best price in Calgary), Chefmaster food colouring (bulk size), isomalt, Silpats, marzipan, and Lindt chocolate couverture(in 2.5 kg bags). Here you can also buy foods made by students in the baking, cooking and meat programs. I suggest calling them at 403-774-5072 ahead of time to check if your item is in store. Cakes N More

Cakes N More specializes in cake decorating and sugar craft/gum paste flower making supplies, including but not limited to: stencils, cutters, silicone leaf/petal veiners, Satin Ice fondant, Platinum Paste gumpaste, petal dust, powder and lustre colors. A great selection of styrofoam cake dummies too.


Walmart has expanded their cake decorating section to include a greater quantity &  selection of  Wilton brand of cake decorating supplies. In most Walmarts, the cake decorating supplies can be found alongside the craft section.


At Homesense, products differ weekly, and from store to store. I have found here digital scales, baking pans, cookie cutters, etc.

The above sugar art showpiece was made for display at the 2009 Calgary Stampede Creative Arts and Crafts exhibition. This competition is open to anyone, and it’s a great community event because the entries are contributed by local Calgarians and Albertans. Anyone can enter, and it’s a unique way to be part of the fun.

For the idea, I wanted to created a piece that highlighted some of my many favourite foods at the Calgary Stampede. Food is by far my favourite type of item to create out of sugar. There’s something amusing about sweet items that look savoury – and I love the combination of the feeling of cooking and cake decorating at the same time.

Here’s a run-down of how this showpiece was created:

  • It was a rule in the competition for the exterior to be decorated out of edible materials (i.e. fondant), but for the interior to non-perishable, because this was to be on display for the entire duration of the event. In my case, I chose to carve each tier out of floral foam. A center dowel runs also through the length, which is securely attached to the base.
  • The mini donuts were hand-shaped out of fondant that was coloured with a mixture of brown and orange, then dipped in cinnamon sugar. The zig-zag edge of the donut bag was created using pinking shears.
  • The teeth indentations of the corndog was created using the end of a round piping tip, and additional texture was created using modelling tools. The ketchup and mustard are made from royal icing.
  • Relish was created by rolling out a piece of light green fondant, brushed one side with green and yellow colour, then cut it up into little squares.  Shine was added with green coloured piping gel. The same process was used for the onions, except with a purple/red colour and clear piping gel.
  • The beef in the bun was created by rolling out a light brown fondant/gumpaste very thin, cutting it in circles, folding the circles loosely, then painting the edges with a darker brown.
  • The plate was made out of pastillage, a icing sugar and gelatin mixture that dries very hard.

Update: This entry received the 1st place award in Novelty Cake section of the 2009 Western Lifestyles Creative Arts and Crafts Competition at the Calgary Stampede. Thank you for all the wonderful visitors that showed up to see!
